What is vitamin B12?
Vitamin B12 (or cobalamin) is one of the water-soluble vitamins and is part of the B vitamin complex, which consists of eight B vitamins. Vitamin B12 is significantly involved in various metabolic processes in the body, including the breakdown of fatty acids. Its central importance for the metabolism of the vitamin folic acid (folate) also makes it important for blood formation. Other examples include: support for homocysteine metabolism, contributes to brain and nerve functions, is involved in memory function, and helps reduce fatigue as well as lethargy. It plays an important role in tissue growth and development. Not to mention its positive influence on the immune system.
Vitamin B12 in our food
Vitamin B12 is found exclusively in animal foods. Under a strict vegan diet, it is therefore easier to develop a vitamin B12 deficiency. In addition, a vitamin B12 deficiency only becomes noticeable after years.
The food richest in vitamin B12 is liver. Other food sources include meat, fish, eggs and dairy products. Vitamin B12 is only contained in plant-based foods if bacterial fermentation has occurred, but then only in very small quantities (bacterial fermentation/fermentation e.g. sauerkraut) that are not sufficient to cover the recommended intake.
